What to Do With Your Farmers Market Haul

So the weather warms up, and you’re excited to see all of the fresh fruits and vegetables at your local Farmers Market! So excited, in fact, that you get a little over-zealous with your purchasing… Now it’s a few days later and your prime produce is about to turn the corner from delicious nutrition to compost fodder. What to do??? Here are a few ways to use up some of that Farmers Market Haul before you lose it:

  • Veggie chips
  • Juice
  • Dice peppers or onions to freeze for later
  • Quick breads and muffins (zucchini, carrots, parsnips)
  • Can diced tomatoes or salsa
  • Make and can/freeze marinara sauce
  • Make and freeze soup
  • Freeze snap peas, take out later for stir fry meals
  • Herbs: Dry the herbs, Basil Pesto

Happy harvesting!
