One of my favorite strategies for getting dinner on the table is breakfast for dinner. Not only does it make a good plan for evenings when you need to get food on the table quickly and without much thought required, but it also can be inexpensive, and nearly everyone likes breakfast food, right?? Plus, it’s a great fall-back plan, because many foods you might serve are staples that you keep on hand anyway, and they are fast to prepare.
I’d like to share with you some of the ways my family does breakfast for dinner. Although at breakfast I may not necessarily serve so many sides, I do try when I serve breakfast for dinner to include a vegetable (usually potatoes) and plenty of fruit.

- drinks: smoothies, hot chocolate, tea, coffee
- muffins (blueberry, morning glory, pumpkin) or quick breads (banana-chocolate chip, Irish soda bread, zucchini)
- scones (dark chocolate-cherry)
- coffeecake (lemon poppy seed or blueberry-lime)
- cinnamon sugar focaccia bread
