Weekly Meal Plan #89

This week involved a lot of come-and-go for me. Three separate camps and activities most days, spaced just right so that we were barely home long enough to grab a snack and gear up for the next thing. So my favorite things about this week’s plan were planned leftovers and my freezer stash. It’s easy to make meatball subs for dinner when you have homemade frozen meatballs and sub buns stashed away! And then the next evening’s meal practically made itself, since the meatballs and sauce were ready to warm – I just boiled pasta and set the table. I didn’t realize we would have such a heavily-scheduled midsummer week…but I’m so happy that I was prepared for it!


Katie’s plan:

  • Leftovers
  • Ham sandwiches on sourdough bread, chips, zucchini chips with homemade Ranch dip, blueberries
  • Dinner with family: pizzas, salad, green beans, watermelon, vanilla ice cream and blueberry coffeecake
  • Meatball subs on homemade buns with marinara and mozzarella, cherries
  • Spaghetti with homemade marinara sauce and meatballs, cherries
  • Slow cooker chicken tacos, homemade black beans, brown rice, fixings, chips and guacamole
  • Rustic vegetable quiche, bacon, pumpkin-dark chocolate scones, peaches
  • Other things go make this week: English muffin toasting bread, pullman sandwich bread, dark chocolate-cherry scones, cinnamon rolls, nutella dark chocolate cookies, mini doughnut muffins

Theresa’s plan:

  • Work BBQ, brought Blueberry Muffins
  • Chicken Salad on Croissants, roasted yukon gold potatoes, salad, strawberries
  • Grilled chicken, Butternut Squash Soup, green and wax beans (from the garden!), cherries, salad
  • Bowtie pasta, leftover chicken, apple slices, salad and carrot sticks, banana mini muffins
  • Dinner with family: pizzas, salad, green beans, watermelon, vanilla ice cream and blueberry coffeecake
  • Jasmine rice, grilled chicken and smoked sausage, strawberries, frozen corn off the cob
  • Other things to make this week: Chocolate chip muffins, Jumbo Blueberry Muffins, Zucchini bread, Zucchini muffins, (and mini muffins)
