Weekly Meal Plan #88

My highlight this week was simply returning to the time of year when we can harvest the garden! Plentiful zucchini means batches of 4 loaves of zucchini bread at a time, 24 zucchini blueberry muffins at a time, impromptu sides of wax beans, and unexpected counters full of basil that I have to decide whether to make into pesto, pizza, or something else! While I am a relative black thumb when it comes to growing things, I am blessed to be married to my “master gardener” as I call him. We balance each other well – he takes care of the planting, weeding, and watering, and then brings me the harvest. It’s my job to actually do something with it!

Katie’s plan:

  • 4th of July: dinner with family, brought a veggie tray with Ranch dip
  • Ultimate chili with fixings, cherries
  • French bread pizzas with homemade pizza sauce, corn on the cob, watermelon
  • Jambalaya, Bread Machine French bread, corn on the cob, watermelon
  • Brown Rice Fajita Bowls with fixings, South of the Border Slaw, watermelon
  • Camp fire: Hot dogs on homemade buns, potato chips, fresh veggies and Ranch dip, cherries, apricots, and blueberries
  • Ham, mashed potatoes, corn, honey-oat pan rolls, blueberries
  • Stone soup, pretzel rolls, watermelon
  • Other things to make this week: ginger almond cashew granola, pullman sandwich bread, English muffin toasting bread, sourdough bread, English muffins, dark chocolate-cherry scones, hamburger buns, sub buns, cinnamon rolls, froze 22 pounds of organic blueberries, blueberry buckle coffeecake

Theresa’s plan:

  • Taco Night: Slow Cooker shredded chicken, steamed jasmine rice, frozen corn off the cob, sour cream, shredded cheese, soft and hard tortilla shells
  • Sandwich Night: salami, ham, and provolone on kaiser rolls; cheese and summer sausage, bell peppers, grapes
  • Pizza, Pizza pockets, strawberries, salad
  • Dinner with family, brought homemade macaroni and cheese
  • Leftovers
  • Burgers, Buns, Fries, Grapes, Salad and Peppers, Green and Wax Beans (from the garden)
  • Cheese tortellini, grilled smoked sausage, cantaloupe
  • Other things to make this week: jumbo blueberry muffins, jumbo chocolate chip muffins, jumbo lemon poppyseed muffins, mini banana muffins, zucchini blueberry mini loaves, 4 loaves of zucchini bread, zucchini blueberry muffins, homemade donuts
