Making homemade French Bread is one of my favorite things. It always makes me wish I did it at least once a week. Inevitably, however, I’ll end up with leftovers that need to be eaten rather quickly or else I just have to use them for bread crumbs or to feed the ducks. Which, actually, my children would love if we did once a week! My favorite way to use leftover french bread is to make a fast dinner of French Bread Pizza! It’s tasty, quick, and (especially if you have picky eaters in your house) everyone can pick their own toppings!
Also, if you want to use the French bread pizza as an appetizer, cut them into 1- to 2-inch pieces. Especially then, the quick prep can go a long way for a great tasting and filling appetizer!

What you need:
- 1 loaf of French bread, store-bought or homemade
- 1/2 c. salted butted, melted
- 1/2 c. olive oil
- 1 t. garlic powder
- 1 c. pizza sauce
- 2 c. shredded mozzarella
- suggested toppings: mini pepperoni*, Italian sausage, fresh basil, diced tomatoes
*I think mini pepperoni fits easier on the French bread. If you just have regular pepperoni, you can simply cut it in half or quarters with some kitchen shears. I’ve done that with good results also.

Serves: Makes about eight 4-6 inch pizzas per loaf of french bread
Multiplying the recipe: You can do this with as many loaves of french bread that you have! I would recommend baking one tray of pizzas at a time so that they can brown well and evenly, but if you really want to do two at a time, make sure to rotate the pans so that can cook as evenly as possible.
French Bread Pizza:
Preheat oven to 400F. Line a baking sheet with aluminum foil. Cut the French bread in half lengthwise, and then into quarters. Combine the melted butter, olive oil, and garlic powder in a small bowl. Using a pastry brush, brush tops of the eight pieces of bread generously with butter mixture and place on prepared baking sheet. Bake for 2-3 minutes, until bread is lightly toasted.
Top bread with pizza sauce, shredded mozzarella, and preferred toppings. Return to the oven and bake for another 10 minutes, or until cheese is lightly browned.
