Weekly Meal Plan #77

My highlight from this last week was actually a “low-light.” Sometimes I can have great plans for meals, or at least full plans. This last week was not one of those times. I knew I was going to be busy planning and executing a birthday party, so I tried to think of easy meals for before the party and then ways to use up leftover ham for after the party. My plans did not pan out. I kept forgetting to soak the dried beans overnight to use for the ham and bean soup. I never gave myself enough time to prep the potatoes to make the scalloped ham and potato casserole. What did that mean? I was grateful to my stock of English Muffins and sandwich bread in the freezer. Lots of quick sandwiches!

Katie’s plan:

  • Slow cooker Mexican stew, Texas toast, steamed green beans, homemade applesauce, sliced cheese
  • Leftover ham, sliced cheese, crackers or bread, salad with fixings, mini cucumbers, snap peas, clementines
  • Chicken potpie, buttermilk biscuits, homemade applesauce
  • Slow cooker salsa chicken and black bean soup with fixings, leftover biscuits, cantaloupe
  • Ramen, leftover biscuits, sugar snap peas, grapes
  • Takeout pizza, snap peas, grapes
  • Dinner with family: brought spinach salad with fixings
  • Other things to make this week: 2 loaves sandwich bread, blueberry muffins, pie scrap cinnamon sugar spirals

 

Theresa’s plan:

  • Pizza, leftover vegetables, home-canned applesauce
  • Bagel and English Muffin sandwiches, leftovers
  • Hosted a LEGO-themed birthday party: Pizza cut into LEGO brick shapes, LEGO Jell-O jigglers, a “LEGO Beach” with minifigs hanging out on Pimiento Cheese Island with their carrot and celery boards and a hummus “sand bar,” bell peppers, and snap peas; cantaloupe and honeydew “bricks”, mint chip ice cream cake, vanilla chocolate chip ice cream cake
  • Ham, ciabatta, leftovers from party
  • Ham honeydew, bread, raw veggies
  • Wagon wheel pasta, ham, steamed carrots, home-canned applesauce
  • Ham and egg sandwiches, leftovers, corn, clementines
  • Wraps, strawberries, green beans, spinach salad
  • Pasta, salad, french bread, corn, red peppers, grapes
  • Other things to make this week: sandwich bread, Iced Tea, Lemonade
