When Katie and I were talking about our next Showdown ideas, we thought of doing pancakes. We have had some variation on the theme of “store-bought vs. homemade” for many of our showdowns, so our first idea was to have a store-bought pancake mix versus homemade pancakes. Then I looked at her and said, “Well, I never have store-bought pancake mix…and I don’t really want to…” She agreed. Double thumbs down on store-bought pancake mixes! So we decided to instead have our tasters test out a homemade pancake mix versus another homemade recipe.
To be completely honest, both recipes can be prepared like a mix. Whisk up your dry ingredients and reserve them. That’s all the mix is anyway! When you want to make your pancakes, get the wet ingredients out and mix up the batter. Easy peasy.
Since both recipes are homemade, I’ll point out the differences in the recipes: The Pancake Mix uses vegetable oil as the fat and sugar as the sweetener. Everything is mixed by hand. The Fluffy Pancakes use butter as the fat and malted milk powder as the sweetener. The wet ingredients are whisked with an electric mixer.
So what did our tasters think? The biggest margin of victory was on taste, where the Fluffy Pancakes doubled the votes of the Pancake Mix. That didn’t really surprise me, since the Fluffy Pancakes recipe uses butter. In texture, the Fluffy Pancakes only edged over the Pancake Mix by one. And in overall, Fluffy came out ahead of the mix by a few votes. Many of our tasters thought that this was one of our hardest showdowns to decide yet.
Getting out the mixer for one step for pancakes might be just too much for you on your Sunday morning, but the flavor of butter over oil is enough to convince me to stick with it! With either recipe, the result from our tasters was clear: “Pancakes are tasty!” Indeed.
