Weekly Meal Plan #65

We are starting a new format for our Weekly Meal Plan posts. We will each take turns sharing something that was a highlight from our week, whether that is a new recipe, something that surprised us (good or bad), or something that we find helpful to point out.

My highlight this week is the Avocado Lime Sauce from Catherine McCord’s Weelicious. I had made her chicken taquitos several times before, but not yet tried the avocado lime sauce that she recommends for dipping them. Wow, I certainly saw why she recommended the pair! It was delicious. I used the leftover sauce as a sandwich spread the next day, and that was equally good. I highly recommend it!

Katie’s plan:

  • Breakfast for dinner: pancakes, blueberry buckle, eggs (scrambled and fried), boiled potatoes & carrots, homemade applesauce
  • Reuben sandwiches, homemade French fries, steamed broccoli, sliced pears
  • Pan-grilled chicken, baked sweet potato fries, Irish soda bread with raisins and walnuts, homemade applesauce
  • Pizza, mixed vegetables, apricots
  • Fried rice, homemade applesauce, creme brûlée
  • Spaghetti, meatballs, steamed broccoli, homemade applesauce
  • Beef tortilla soup with fixings (avocado, shredded cheese, sour cream, tortilla chips), blueberry muffins, frozen cherries
  • Other things to make this week: pastry cream (to fill eclairs), 2 loaves whole wheat sandwich bread, mustard vinaigrette, parsnip muffins
