How to Make a Pimiento Cheese Ball

This cheese ball was often a staple when I first started spending time around my husband’s family, and it’s still one of my husband’s favorite snacks. Handed down from his grandpa, this is definitely a crowd-pleaser! And with only four ingredients and almost no prep, it is certainly a cook-pleaser, too!

What you need:

Ingredients

  • 1 lb. shredded cheese (your favorite combo of cheddar and colby)
  • 1 small onion, finely diced
  • 4 oz. diced pimientos
  • 1/2 c. – 3/4 c. mayonnaise

Equipment

  • cutting board and knife
  • medium mixing bowl

Time: 5 minutes, 1 hour to chill

Freezeable: No.

Serves: A crowd!

Multiplying the recipe: I would mix batches separately so that the pimientos and mayonnaise mix evenly.

Pimiento Cheese Ball:

Mix all ingredients together. Start with 1/2 c. mayonnaise, then mix, then add more mayonnaise as needed to reach desired consistency. Form mixture into a ball. Though messy, I find this easiest to accomplish with my hands!

Cover and refrigerate for at least 1 hour before serving. Serve with sturdy crackers and/or tortilla chips. Enjoy!
