Make-Ahead Muffins, Two Ways

The holidays are a busy time. It’s a challenge to get dinner on the table…let alone a homemade, healthy dinner that everyone likes. So one of my favorite strategies is making things ahead of time. When afternoon dinner prep time is short, having parts of the meal already started makes following your plan so much less stressful.

That’s where this recipe comes in. You mix up the batter once – whenever you want! – and stick it in the fridge for up to a week, pulling it out to bake off muffins for whatever occasion you need them for: an after-school snack, a quick weekday breakfast, a relaxed weekend brunch, or as a side for dinner. In the first week that I started testing this recipe, I made dozens of muffins in various flavors, because I just kept finding opportunities.
