Do you love peanut butter cups? Me, too. And now you can have them anytime, using five common ingredients that you probably already have on hand. So when a late-night craving strikes, you don’t have to change out of your jammies and find your shoes to head to the store, you can just whip up these beauties!
What you need:
- 1 lb. chocolate (semi-sweet, dark, bittersweet, or milk), melted
- 1 c. creamy peanut butter (not natural)
- 1/4 – 1/2 c. confectioner’s sugar
- 1/2 t. vanilla
- 1/4 t. kosher salt
- microwaveable bowl and spatula
- mini muffin pan
- 24 paper mini muffin liners
- measuring spoons and cups
- medium bowl and spatula

Mini Peanut Butter Cups:
Place the chocolate in a small microwaveable bowl. Microwave in 15-second increments, stirring after each. Once the chocolate begins to melt, stir well with a spatula until smooth, heating for 5-10 seconds as necessary to finish melting.
Place the paper liners in the mini muffin tin cups. Using a measuring spoon, scoop 2 teaspoons of melted chocolate into each liner, and then use the back of the spoon to carefully spread the chocolate over the entire inside surface of the liner. Place the muffin tin in the freezer for ten minutes to set.
Meanwhile, combine peanut butter, confectioner’s sugar, vanilla, and kosher salt. Stir until evenly mixed. The mixture should be fairly stiff. Remove the muffin pan from the freezer and scoop 2 teaspoons of the peanut butter mixture into each chocolate shell, smoothing down the filling as best you can. Return to freezer for ten minutes.
Remove the muffin pan from the freezer and carefully spoon 1 teaspoon of the remaining melted chocolate over top of the peanut butter filling, spreading it all the way to the sides of the liner. Return to freezer for ten minutes to set.
Remove peanut butter cups from the muffin pan and store in an airtight container in the refrigerator, with waxed paper between layers. Remove peanut butter cups from the fridge about 20 minutes before serving to soften chocolate.
