One person’s cornbread is another person’s “this is not cornbread.”
We had a couple of favorite cornbread recipes that we wanted to put to the test, so we gathered our families for a chili and cornbread dinner. We were interested to see whether our families would prefer the butter-maple-buttermilk combination of the cornbread from Homemade Pantry, or the simple sweetness of The Naptime Chef’s cornbread. Because we have so many children between us – and because kids love things that come in small packages – we made both recipes as corn muffins.
We asked our tasters to vote for their favorite muffin in three categories: taste, texture, and overall favorite. What we discovered was a bit surprising: though the recipes were very different, there was no clear leader in any category. It was a bit difficult for some of our tasters to choose a favorite. The one striking comment that was made was that the maple version – which was less sweet – was better for crumbling into chili.
