Two Recipes Using Zucchini: Zucchini Bread & Chocolate Zucchini Cake

Zucchini season is usually short, but prolific. You can check your plants first thing in the morning and find nothing ready to pick, only to come home to monster zucchini. It amazes me every time, though I should expect it by now!

Since zucchini plants can get away from you so quickly, it’s important to have some go-to ways to use it up before it goes bad. Here are two of our favorites.

Katie’s Chocolate Zucchini Cake is a family favorite, modified to make it even better! Full of shredded zucchini and cocoa powder, and studded on top with chocolate chips, it’s a great summer cake.

Theresa’s Zucchini Bread is stirred together in a flash. She freezes 20 loaves of it during zucchini season to last her family throughout the year! That’s a lot of love for zucchini bread. And no wonder – enhanced with cinnamon and sugar, this bread has lots of flavor.
